In the Honghe River Valley of southern Yunnan, sugar cane has been cultivated for over a thousand years. Here, the cane is still harvested by hand and processed using traditional methods that have changed little since the Tang dynasty.
Unlike the highly refined white sugar found in supermarkets, our brown sugar is made by simply evaporating the freshly pressed cane juice over a wood fire, then pouring it into moulds to cool and solidify. Nothing is added; nothing is taken away. The result is a sugar that retains all of the cane's natural minerals â calcium, potassium, magnesium, and iron â giving it a complex, caramel-like depth.
Uses: Stir into tea or coffee, use in baking, add to braised dishes for depth, or simply shave off a sliver and enjoy as a natural sweet treat.
